醋杆菌属(學名:Acetobacter),也称醋酸杆菌属,是红螺菌目醋酸菌科的一属好氧或兼性厌氧非发酵革兰氏阴性杆菌。其特点是能够在有空气的条件下将乙醇转化为乙酸。醋酸杆菌属包含有多个种。很多其它的细菌也能在不同的条件下产生乙酸,但醋酸杆菌属中的细菌只在这一个条件下。
